1 orange 1 lb fresh or frozen rhubarb (500 g)
1 large apple 1 cup water (250 ml)
1/2 cup granulated sugar (50 ml)
2 cups fresh strawberries (500 ml)


Grate rind & squeeze juice from orange. Cut rhubarb into 1" (2.5 cm) lengths. Peel, core & thinly slice apple.

Put orange rind, juice, rhubarb, apple, water & sugar in pan. Cover & bring to boil. Reduce heat and simmer for 10 minutes or until fruit is tender. Stir occasionally. Remove from heat & add strawberries. Add more sugar if you don't think it's sweet enough - brown sugar is good.

Can be served warm or cold. Delicious alone or serve with ice cream or yogurt.
